NTR 6101. Global Health/Nutrition Program Planning. (3 Hours)

Focuses on planning for the development, implementation, and evaluation of global community-based health/nutrition programs. Explores and applies various program/policy analysis and evaluation tools, social science theoretical perspectives, and other models pertaining to global community-based health/nutrition programs. Examines how to set realistic goals tied to outcomes that improve health and support wellness of diverse and target audiences. Explores changing nutritional behavior and the various global and cultural barriers to such change.


NTR 6130. Global Healthcare and Nutrition Communication. (3 Hours)

Examines cutting-edge research and current theories in global health and nutrition communication. Studies empirically proven health campaigns, offering students an opportunity to understand the key qualities of messages that can best influence health-related decision making. Analyzes the mechanisms for transmitting key knowledge to diverse and target audiences, including the potential utility of social networking tools in developing nutrition as an applied science. Offers students an opportunity to test their own messages using print and electronic media. Seeks to help students create communities of “healthy practice” among populations that would benefit the most from improved healthcare and nutrition.


NTR 6155. Global Health and Nutrition Entrepreneurship. (3 Hours)

Presents advanced analysis of the global problems and considerations involved in establishing, organizing, and operating global health and/or nutrition-based businesses, practices, consultancy, or other solutions. Focuses on tools, techniques, and resources necessary for establishing a business, including developing a business plan, marketing and advertising, reimbursement, and legal and regulatory matters.


NTR 6202. The Financing of Nutrition and Wellness. (3 Hours)

Assesses the impact that public and private funding has on health communication and nutrition campaigns. Compares campaigns and approaches in the United States with those in other countries. Focuses on the role of various global stakeholders, including but not limited to policymakers, employers, and insurance companies, in controlling healthcare costs. Offers students an opportunity to develop local, national, and/or global policy recommendations for supporting better nutrition practices among a diverse population.
